Food safety when cooking

The way we cook our food is as important as the way we prepare and store it. Inadequate cooking is a common cause of food poisoning. Most foods, especially meat, poultry and eggs, should be cooked thoroughly to kill most food poisoning bacteria.

Listeria is an illness caused by eating foods contaminated by the bacteria, Listeria monocytogenes. Listeria infection is uncommon but it can cause death in at-risk people, such as the elderly and people whose immune systems are not working properly. It can be dangerous to pregnant women and their unborn babies.

Some foods are high risk
Some foods are more likely to contain listeria. These include:

  • Ready-to-eat seafood, such as smoked fish or mussels
  • Premixed raw vegetables, including coleslaw

Food - 'use-by' and 'best before' dates

All packaged foods with a shelf life of less than two years must have a use-by or 'best before' date stamped on the box, wrapper or bottle. This date gives you an idea of how long the food will last before it loses quality. A product will remain fresh and of good quality right up to the 'best before' date (and sometimes beyond) if it is properly stored, both at home and at the supermarket.

The small intestine of a person with coeliac disease is sensitive to gluten, which is a protein component of the grains wheat, rye, barley, triticale and oats. Even tiny amounts of gluten can cause harm. When the lining of the small intestine is damaged, nutrients are poorly absorbed. Untreated, this can result in a range of disorders including malnutrition, osteoporosis and infertility.

Diabetes is a condition in which there is too much glucose (a type of sugar) in the blood. Over time, high blood glucose levels can damage the body’s organs. Possible complications include damage to large and small blood vessels, which can lead to heart attack, stroke and problems with the kidneys, eyes, feet and nerves.
